PB&A Oatmeal

We all waste food—and I’m no exception. Instead of pretending otherwise, I start small with fruit that’s a little past its prime. Here, those brown lunchbox apples find new life in a warm bowl of peanut butter oatmeal, browned butter, cooked apples, and a little crunch on top from apples and chopped peanuts. It’s comforting, quick, and surprisingly beautiful—breakfast of resourceful champions right here. Serves 4.

 

Ingredients

2 tablespoons butter

1 ½  cup diced apple, divided 

½ teaspoon cinnamon 

½ teaspoon nutmeg

1 cup Oats

2 cups milk or other liquid

¼ cup peanut butter

3 tablespoons brown sugar

¼ cup peanuts

Directions

In a saucepan, melt the butter. Once it begins to bubble and foam, keep cooking it about a minute more until some of the solids start to brown. Add 1 cup of the diced apples and saute them for about 2 minutes. Add the oats, milk, peanut butter and brown sugar. Let that come to a boil. Cook until thickened. Serve in small bowls and garnish with the remaining diced apples and peanuts.
